Greek Grain Salad


I’m so excited to be working with my friends at Amber Waves Farm in Amagansett, New York this summer.  The farm grows organic vegetables, fruit, flowers, and wheat and over the last few years I have loved experimenting with the different fruits and veggies that show up in the CSA box each week. This year, Amber Waves opened a beautiful new farm store, and to celebrate, I’ll be sharing recipes inspired by what’s in season and available at the farm all summer long. This week I’m excited to share my recipe for Greek Grain Salad- an easy, crowd-pleasing side for all your summer P’s (parties, picnics and potlucks!)  Big grain salads are one of my go-tos for cooking for groups, and this one in particular makes great use of summer vegetables – Amber Waves grows peppers, cucumbers, cherry tomatoes, parsley and even onions and garlic.

This salad has all the flavors and satisfying crunch of a classic Greek salad, with farro instead of lettuce. Farro is my favorite grain – it’s deliciously nutty and chewy and only takes a half hour to cook, or 10 minutes if you can find the pearled kind. In this case, farro not only makes the salad a more substantial side for a party but also makes it a better dish to prepare in advance, and a better one to bring to the beach!  Speaking of the beach, it might just be time for a dip…



Greek Grain Salad


  • 1½ cups farro
  • 2 red bell peppers, cut into ½-inch wide strips
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons red wine vinegar
  • 1½ teaspoons minced fresh garlic (1 large clove)
  • 1 large English cucumber, seeded and cut into ½-inch dice
  • 1 pint cherry tomatoes, sliced in half lengthwise
  • ¾ cup minced red onion
  • ½ cup chopped fresh parsley
  • ½ cup pitted Kalamata olives
  • 8 ounces feta cheese, ½-inch diced
  • extra virgin olive oil
  • kosher salt and freshly ground black pepper


Preaheat the oven to 425 degrees.

Combine the farro with 4 cups of water in a medium saucepan. Bring to a boil, then lower the heat and simmer for 25-30 minutes, until the farro is just cooked. Drain and pour into a large bowl. Whisk together the lemon juice, vinegar, garlic, 3 tablespoons olive oil, 1 teaspoon salt and 1/2 teaspoon pepper. Pour over the hot farro and stir well.

Meanwhile, place the red pepper slices on a half sheet pan and toss with 2 teaspoons olive oil and ¼ teaspoon salt. Roast for 20 minutes, turning once halfway through. Set the peppers aside to cool slightly.

Add the cucumber, tomatoes, red onion, roasted peppers, parsley and olives to the bowl with the farro. Stir until combined, then gently fold in the feta. Serve at room temperature.

  1. This looks so good! My daughter has celiacs so I need to replace the farrow. Would you recommend brown rice or quinoa? Would I need to increase the dressing amount with either of those?

      1. Why would I not share my honest opinion after making the recipe? I have loved some of her recipes in the past but this one misses the mark in my Opinion.


  2. ” Hey Gunter, it’s time for your bath.” Miss. Kim said.

    Bello sat in the living room. He loved the lumpy couch. He wondered what why they named their dog “Gunter”. He looked as his cousin Chad came in. Chad  is a 28 year old basketball player. He walked quickly. He’s quick movement brought  cool breeze along with it. Bello watched as Chad patted   Gunter, their dog on the back, then patted his hair, like he was arranging it. Bello watched chad disappear into the hallway.

    Later Bello goes inside the guest room. He wanted to call Eva his best friend. She moved over to Detroit after she graduated from Bris beck college in London. Bello too graduated from the same college on the same day. He thoght that he could see her but he was wrong on that day, but he didn’t. Eva always said, ” I need to hang around Nominal guys.” Bello never understood what she meant by that. 

    Eva could cheat on him many times yet Bello would gladly forgive her.

    Bello’s thought was interrupted by the knock on the door. ” come in.” Bello said. It was his youngest cousin, Alfred. He carried Afro and wore glasses. He reminded Bello of his chemistry teacher back in high school.

    ” Mum said I should call you, dinner’s ready.” Alfred said with little enthusiasm. The Zig- Zag lines on his forehead made Bello to laugh.

    ” OK tell her that I will be there in 30 minutes. ” Bello said wondering how quick dinner was served.

    Bello came down to the living room. The dinning section was empty. He should have known that it was another silly prank, but Alfred looked damn too serious to play pranks. As he muttered some words, about to live, he saw Mrs. Kim coming out from the living room. 

    ” you’re late again.” She said smiling. 

    Bello followed her to the kitchen as she uncovered a round big covered plate. Bello watched her as she dished the macaroni and cheese with 2 steaks and a glass of Milk. Mrs. Kim left the dinning almost immediately as if trusting Bello not to take anything. Bello wondered if it was some kind of trap, but he’d hear her cranky voice from the living room. He quickly took his dish and went to the living room.

    He’d hear loud sobs from the living room. As he entered, everyone was crying. It was as if everyone was supposed to be crying. They were   watching passion of Christ.Bello was the only person not sobbing. He was thinking of Eva. 

    Bello looked around. He didn’t see Chad here. He finally began to eat, but Mrs. Kin slapped the fork from his hands. 

    ” Wait for family prayer.”

    The sobbing lasted for 30 minutes and soon Mrs. Kim turned off the T.v. she said a short prayer and soon they began eating. 

    Almost immediately, Chad walked in. It was as though he was waiting for the whole thing to end. Mrs. Kim wanted to say something to him, but she held herself. Chad entered the kitchen. He came out with a pack of barbecue and Marconi cheese pizza. A girl who Bello saw peeping through the door finally came in. She sat on the couch, having greeted Mrs. Kin.

    Chad looked at his mum as if waiting for her to say something but she didn’t. 

    “Mum my class teacher said that we should get a lab coat tomorrow. We’re having a science experiment tomorrow.” Alfred said.

    ” Hey where’s Gunt er. ” Bello said suddenly wishing he didn’t say it. The way he kept his face in regret forced a stupid smile on Alfred’s face, ” I thought you didn’t care about dogs.” Gunter came out almost immediately. A trail of what looked like dog meat followed him. He barked a little louder. Bello watched as it licked Alfred’s hands and face. ” Gross! Disgusting!!. ” Bello said. Then he saw Chad give him that disapproving look.

    After dinner, Chad patted Gunter on the head. ” That’s right boy. Let him have it.” He said.

    ” Mum please I need to borrow your car. It will be a quick drive, no staying out late, no getting wasted.” He said as he entered inside.

    Bello looked at the girl that came by with Chad. She was quiet the whole time. She looked like one gasping for air. Her leg knocked each other.

    Bello finally came out, wearing as a sleeveless and a faded jean which was torn at the knee and boots.

    ” I don’t ……” Mrs. Kim voice was cut off by Chad’s voice , 

    ” Hey mum if you don’t want me to use that your old, wretch car, then tell me, cause am ready to use a cab.” He said as he stormed out, the girl slowly following him.

    The next day, Gunter died in his sleep. It was Alfred that noticed it. He suddenly screamed. His loud voice woke everyone up. Alfred kept on pushing the dog side ways as if to wake it up. Bello looked at the white- brown spotty dog. It lay on the floor in Alfred’s room. 

    Mrs. Kim stood there, unmoved. She made some calls before she left the house. Bello saw numerous pictures of Gunter hung on the walls in Alfred’s room. His eyes were all watery.

    Later some men came by and took Gunter away while Bello and Alfred were in the living room. They both watched  CNN. News. The first headline shook Bello’s body. It read:

    “Dead lady found in the car of a man.”

    The man’s picture was shown on the screen. It was Chad. A cold shiver again ran through Bello’s spine. It was later revealed that poison was found inside the lady’s body. 

    Mrs. Kim came back. Alfred wanted to tell her but she brushed him aside. ” Did the men come by??” Mrs. Kin asked. ” Yes, but mum Chad just got arrested for killing a lady, it’s all over the news. 

    Mrs. Kim just smiled heavily as she brought out her car keys and they all went to the prison. Mrs. Kim looked at Chad, who was chained already and was on police uniform.

    ” Mum, please bring me out of prison. I’m telling you the truth mum, I didn’t give her any poison. It was all a set – up.” 

    The way Mrs. Kim left the prison almost immediately left suspicion in Bello’s mind. Alfred was all moody. It was more of Gunter’s death than Chad’s arrest than made him sad.

    Later Alfred tells Bello that Chad deserved to be in jail. ” is right as no one took the fall for him this time.”

    Alfred tells Bello how their mum had to do 11 years imprisonment for Chad, as Chad stabbed their father to death while having a hot argument with him.

     “She was later released from prison with the help of our family lawyer. Instead of chad calming down, the ungrateful ass still hurdles insults on mother. He even robbed a bank, earlier this year, mum had to pay in huge money to release him after their gang were caught.” Alfred said.

    10 months later, and no one said anything about Chad, neither was he visited in prison. It was later confirmed on news that the lady, Jennifer Muddy, who was seen dead in the car with Chad, committed suicide. A suicide note was recovered from her apartment. In which she wrote about she suffered from schizophrenia  and how she couldn’t go on with it. She even wrote on how she planned to kill herself, by poisoning her drink.

    Bello held a sigh of relief knowing that Chad will be released. Mrs. Kim and Alfred just sighed. Bello then understood wise Nora’s teaching.

    “You might be going through the worst situation and you feeling like everyone cares, or should care, the real truth is , no one cares!!”
